Keto Mug Cake (we promise this one’s ACTUALLY good)

So, Kate and I (Amy) have been searching for a good low carb mug cake recipe since we started our low carb/keto journey’s 5 years ago.

Well, they all promised delicious cake and they’ve all gone straight from the microwave to the trash can — EXCEPT for this one.

It’s great as is but here are our tips:

  • Brown the butter in a pan first!
  • Add a pinch of salt
  • Microwave for :45 seconds.

Here’s the ingredients (we used Lily’s chocolate chips):

    These were very good! Any reason why you don’t use brown sugar subsititute instead of white? Just curious if the brown would work.

        I’ve got to say, my household and I REALLY loved this! I prior comment said to add 1/4 teaspoon of baking soda and it makes it more like a little cake, which I like! It fluffy, still a bit dense the way I like, rich but not too much, and I even used a few light cranks of my Himalayan pink salt grinder… TOOK IT TO ANOTHER LEVEL! It’s my new favorite go to dessert, thank you so much for sharing this creation 🖤🙏🖤

    Loooove this! I’ve always been hesitant to try mug cakes ( tried one and I did not like it at all!) but I was really hungry for a keto chocolate chip something, so after perusing Pinterest came across this recipe- and you were right this hit the spot! I thought it was still raw only 45 minutes, but it was PERFECT! This is a keeper!

      You’ll see that it’s 3 NET carbs in the macro screen shot. That’s what you count for low carb.

    Omg it’s soooooo good I am actually eating it right now and I tried it with the brown sugar cause y not ? And so yummy thank for the recipe and I put some home made whip cream on top and whip cream is also sugar free

    Soooo delicious!!!
    Soooo easy!
    I topped with Lily’s milk chocolate chips right out of the microwave. Let them melt and topped with a bit of heavy cream and fresh strawberries! Shared with a friend as a decedent dessert!

    I did add 1 tbl spoon of vanilla, no sugar, Almond milk into the recipe.

    This is the most flavorful I have tried. The brown butter is the flavor key to this little treasure cake!

  35. This is a great recipe, we loved it, I’d call it a cookie not a cake, it has nothing in it to make it raise like a cake but that is no bearing on my opinion that it was very tasty and very likeable.

    I use the Lily’s Chocolate Caramel chips…SO GOOD!! Much better than any plain chocolate ones, but there’s a brand that Kroger just started carrying: HU No Added Sugar Chocolate Chips that use allulose as the sweetener. Very expensive at $12 for a 7 oz. bag, but man, are they fabulous!

    I’m looking forward to making and eating this later today. I’ve been wanting a really good keto mug cake, and came ip with two of my own recipes, but never thought to brown the butter first. I have two keto flourless cookie recipes that call for just egg whites, so I can see two great desserts being made later today 😊!

    So good! But, while making this recipe I mixed up the yolk and white sooo I made 2 treats. I used the white of the egg to make a ‘sugar cookie’ type recipe. I added the listed ingredients omitting the choc chips and did not brown the butter, I did add the pinch of salt. Topped with a dash of sprinkles, micro as instructed and it was also delicious!

    This was wonderful as written. I experimented with hand whipping the unused egg white to soft peaks and folding it in just before cooking it. It was a whole new cake and absolutely delicious! Cooked it about 60 seconds in my 1000 watt microwave.
